EDU v. homemade sweet & sour chicken

I saw an edu for this posted on another forum and gave it a shot tonight. **** was DELICIOUS. this stuff is pretty good for you, it makes 4 servings of 248 calories each.

okay first off gather up your ingredients



for this recipe we will need the following;

sauce:
1 8oz can of pineapple tidbits in juice ( i used crushed )
2 tbsp brown sugar
2 tbsp white vinegar
2 tbsp ketchup
2 tsp cornstarch
2 tsp soy sauce

chicken

1 tbsp flour
1 tbsp cornstarch
1 lb chicken tenders
1 tbsp canola oil ( i used light olive oil because i seem to be out of canola )
1 red bell pepper ( i used two )
1 onion

first step is to make the sauce. combine the JUICE from the pineapple ( set aside the pineapple itself ) brown sugar, vinegar, ketchup, soy sauce, corn starch . whisk the **** out of it



next, grab the chicken and cut into even 1 inch peices, mix up your flour and corn starch and put into bag



put the chicken in the bag with flour/starch and mix it up until the chicken is coated. then dump that **** out and remove the excess flour mixture



add oil to your pan and preheat it, while doing that cut up your veggies



wait for the oil to smoke so you know the pan is nice and hot, or just use an infared thermo to check



this is also a good time to get your water going if you're making rice to accompany the dish

once pan is hot, add your chicken and pan fry it for about 4 minutes or until done



after sitting for a while, your sauce should now look like this



yum yum chicken is done



set that **** aside, i put it on a plate with paper towels to collect the excess oil. make sure to scoop the chicken out, not pour. you want the oil in the pan to stay for your veggies

alright now ad your veggies to your pan



cook to your liking. i wanted mine to be crisp so i didn't cook them down too much



just right, for me.

add sauce, chicken, and pineapple. cook for about 2 minutes until the sauce is reduced a little bit, it should get syrup like. at this point your kitchen should smell amazing



perfecto



plate and enjoy

franks red hot is ftmfw. thats a pretty damn easy recipe. and it would be quicker to put your veggies in right before the chicken is done instead of waiting around for it to finish but whatevs. still looks bangin

you want to remove the chicken to cook the veggies, the bits that stick will come loose and give more flaver to the veggies. it also lets the excess oil come off of the chicken ( if you just left it in the pan your end product would come out a bit greasy )

so then use less oil. you dont need a lot. plus adding it all in there, like you do in the end anyway, will add even MORE flavor to the veggies. the only reason you would need to take the chicken out is if you want to caramelize the onions or peppers which takes quite a bit longer. if you want them crunchy, like you and i do, they only need a minute or so to warm up. if your food is greasy it means you used too much oil. you want the oil to be a lubricant but you dont wanna use so much that it soaks into the food. you can always add more if you need to. i've been cooking for quite a long time now and using too much oil is a common mistake. not saying you did of course, just saying that if you're worried about greasy food, use less and add later if you need to

I only use a tablespoon of oil, less than that and I won't be able to pan fry the chicken, let alone have any oil reserved for the veggies. I promise you if try both methods you'll find that mine will turn out much better.
