sure, i don't measure anything though, i just eyeball stuff and adjust based off of taste

the filling;

about 2 cups shredded cabbage
half cup diced carrot
quarter cup scallion and celery, both sliced thin
1 glove garlic
about 2 teaspoon ginger root

saute until cabage is reduced, add soy sauce and chili paste / spices to taste ( i used some **** sauce )

set aside to cool until you can handle it

crack a couple eggs and seperate the whites, put about a teaspoon of filling in won ton wrappers and use egg white as glue to seal the edges

boil the wontons about a dozen at a time for aprox 3 minutes, drain them ( you can stack them up they dont stick together too bad )

after you boil them all heat up your pan and spray with cooking spray or sesame oil ( use non stick, i always say egg is the only thing that should touch non stick but this is exception )

fry about 3 minutes on each side and you're done

the sauce, i just boiled soy sauce, honey, rice wine vinegar, and lemon juice to my personal taste

makes about 48 dumpling

are they for healthy eating reasons? or do you just not eat meat?

if for health reasons frying them is defeating the purpose.

I've been looking into making some dumplings or even some pocket pies in the near future, but i'm intimidated by the wonton/crust/pastry/pasta part of it. do you just buy them? or did you make them?

You can buy them at the grocery store. They have egg roll wrappers, wonton wrappers and the like. I think Naysoya makes most of them, they have them between the deli and produce normally, fridge case, by the tofu, odd juices, etc, etc..
