Simple, classic, good burger and fries.

What needed:
* 3-4LB of 70/30 ground beef
* small to medium sweet onion(Vidalia)
* Lawry’s seasoned salt
* potatoes
* hamburger rolls(good ones)
* cheese(your choice)
* Worcestershire sauce
* 1/4" think sliced smoked bacon

Making the burger:
Chop onion into about ¼” pieces or smaller
Put 1/2 the onion in a big bowl
Put some seasoned salt in(a decent bit)
Put in a little Worcestershire sauce
Put the beef in
Put the rest of the onion on top of the beef
Put more seasoned salt in
Put in a little Worcestershire sauce

Now mix it together really good and roll it into patties. You can wrap them in glad wrap individually and put in the freezer. 3-4 lbs usually makes about 12-14 burgers for me

Cook the bacon on a low temp with a bacon press to it cooks evenly and says perfectly flat

Pre-heat grill on high(about 600*)

Put the grill on low (375*) as you put burgers on

Put additional seasoning on both sides of the buger as you put on the grill

Grill on flame(my grill on low is about 370*). I use 70/30 for taste but it does flame allot. If fires start, put burgers on the second level on your grill(or you 80/20 beef next time)

When the burgers are almost done, put the buns on the grill to toast as well as bacon then cheese the bread

Fries:
Wash the potatoes, peal the skin(your preference), then cut to size
As you are cutting them make sure you are putting them directly into a big bowl of ice water(this is the most important part because it takes some of the starchy taste out). Let sit for about 30 minutes

Dry the fries off right before you put them in the oil to cook

Heat of big pot of oil(make sure it is hot before putting fries in or they will absorb all the grease)

Finish with some seasoned salt or fresh ground sea salt or Old Bay

found this. need a reason to make it...

Guinness Chocolate Pudding

Yields: 4 servings
Ingredients
4 large egg yolks
1/2 cup sugar plus 3 tbsp.
1 1/2 cups Guinness Stout
1 3/4 cups heavy cream
4 ounces high-quality bittersweet (70 to 72% cacao) chocolate, finely chopped
Directions

In large nonreactive mixing bowl, whisk together egg yolks and 1/2 cup sugar.

Open can of Guinness and slowly pour into 4-cup measuring cup, pouring down side of cup to reduce foaming. Pour 1/2 cup of Guinness into heavy-bottomed saucepan. Add 1 1/4 cups cream and whisk to combine. Set over medium heat, whisking occasionally, until bubbles just begin to form at edges. Remove from heat, add chocolate and whisk until smooth.

Slowly pour hot chocolate mixture into eggs, whisking constantly to prevent curdling. Return mixture to saucepan and set over moderately low heat.

Cook, whisking constantly, until mixture thickens. Divide pudding among glasses, leaving at least 1 inch of space at top of each. Cover with plastic wrap and refrigerate until chilled and set.

Meanwhile, pour 1 cup of Guinness into small saucepan and bring to boil over medium heat. Reduce heat to moderately low and simmer, uncovered, until reduced to 1 tablespoon, about 20 minutes. Pour syrup into small bowl and let cool.

Beat remaining cream and 3 tbsp. sugar until soft peaks form. Add 1 tsp. (or more to your liking) of the Guinness syrup and beat until combined. Divide cream among 4-6 glasses of pudding and serve.

There is a candy store we drove buy that sells chocolate covered bacon. I bet it is really good. Salty and chocolate go good together (example: chocolate covered pretzels).

Mom bought me some chocolate covered bacon. it was AMAZING, but way too salty. its like they used the pre-prepared bacon that you can just heat up and eat instead of freshly cooked bacon.

had some chocolate with bits of bacon in it at twastheglow's house a bit back... was amazing. it was a good mix.

bacon chocolate chip cookies sounds acceptable. Not really any different than eating chocolate chip pancakes and bacon
