you got the process right i did those wheels. they get stripped then media blasted and prepped for coating. Those debates you speak of have been around for years im surprised they still are around, Most coating gets done at 400 degrees for 15 to 20 minutes which does no harm to the wheel at all. I have been on this debate before and not yet has any one showed any hard evidence that it will weaken or damage the wheel.

Some deep dish rims and going lower would look good but that can be later. But with what you have I think those rims would look better in some variation of silver.

Wheels look good, not sure about them on the car tho. Silver with black wheels take's away all the class the car has. You need something silver like those other BBS's you posted
