i sure wish today was friday

i just got in a bunch of home brew supplies though so i'm pretty siked. hopefully going to brew up a brown ale and a wheat ale this weekend. first time using leaf hops too so that should rock!

personally i find it really enjoyable, and now that i have been formulating my own recipes i have saved quite a bit of money per batch by buying bulk ingredients. but i would suggest starting with a recipe kit.

Also on craigslist there are 2 people selling home brewing equipment at decent prices. I would talk them down personally but they are located across the river from philly i think.

I found this recipe for an Apfelwein which looks really easy and cheap to do.

EdWort's Apfelwein

Ingredients

5 Gallons 100% Apple Juice (No preservatives or additives) I use Tree Top Apple Juice
2 pounds of dextrose (corn sugar) in one pound bags
1 five gram packet of Montrachet Wine Yeast

Equipment

5 Gallon Carboy (I use a Better Bottle)
Carboy Cap or Stopper with Airlock
Funnel
1. First sanitize the carboy, airlock, funnel, stopper or carboy cap.
2. Open one gallon bottle of apple juice and pour half of it into the carboy using the funnel.
3. Open one bag of Dextrose and carefully add it to the now half full bottle of apple juice. Shake well.
4. Repeat Steps 2 and 3, then go to step 5.
5. Pour in the mixture of Apple Juice and Dextrose from both bottles into the carboy.
6. Add all but 1 quart of remaining 3 gallons of apple juice to the carboy.
7. Open the packet of Montrachet Yeast and pour it into the neck of the funnel.
8. Use the remaining quart of juice to wash down any yeast that sticks. I am able to fit all but 3 ounces of apple juice into a 5 gallon Better Bottle. You may need to be patient to let the foam die down from all shaking and pouring.
9. Put your stopper or carboy cap on with an airlock and fill the airlock with cheap vodka. No bacteria will live in vodka and if you get suckback, you just boosted the abv.

Hoegaarden (Belgian White Beer)
Known as “Bieres Blanches” in French, the Belgian white wheat
beers are brewed using about 50% wheat and a combination of spices, typically, orange peel and coriander.
Hoegaarden,is a refreshing cloudy lemon coloured beer.
The sweet/sour and spicy taste and subtle hop bitterness and
aroma makes it distinctively different.

1 can concentrated Wheat wort
1Kg Dry Wheat Malt Extract (or 1kg wheat + 1kg dextrose)
15g coriander seeds (crushed)
2 tablespoons of orange peel (remove pith and use zest only)
1 packet yeast. (Usually comes with concentrated wort)

Bottle Conditioning 6 weeks (min)



METHOD:

- In a brew pot bring 2 litres of water to the boil, add malt, coriander and orange peel, reduce heat and simmer for 15 minutes then turn heat off.

- Add the can of wheat wort and stir until dissolved.

- Rest for 15 minutes and then strain into your fermenter.

- Top up to 23 Liters with cold water (5 Gallons)

- When temperature is between 20*C and 27*C add the yeast

- Ferment out in the usual way.

this seems to be a propular extract recipe for hoegarden

Fermentables
5lb extra light dme
2lbs light clover honey

Hops
1 oz hallertauer for 60
.5oz hallertauer at 45min
final 2 min add .5 oz hallertauer.

Spice
75oz crushed corriander at 45min/
.75 oz of coriander
bitter orange peel at 55min/
