I'll post up what the fish gut one turns into when I make the dish and take the pic. The fish is Japanese Seabream, aka madai, aka Japanese red snapper. Very expensive and nice fish.
I dont understand expensive high class resturants, It lookes like I could pick them last two dishes out of my teeth lol. B.t.w Great pics.

Its usually more than your normal courses that's why the portions are small. That's my understanding at least.

quality + creativity + execution + presentation = $$$

That one dessert there took me hours to prepare for. I only made it once for a special tasting menu, so I had to make 40. Some people enjoy getting many small tastes of different combinations of flavors, textures, temperatures, and items rather than one big bang for the buck dish. There's a big difference between dining out and fine dining. The latter is an experience while the former is a mundane activity.
