Jeep with no doors, top, or sideview mirrors

I have a jeep rubicon now and ive been looking around online at the state laws. vehices require at least two mirrors to provide vision to the rear of the vehicle. I LOVE driving with no top and doors on, as do most jeep owners. As an officer, if you saw me driving without the top and doors, but my side view mirrors were removed as well, would that be somehting you owuld pull me over for? Do most officers take notice to jeeps with no mirrors? It seems like it would be a common sense question on my end, but many times I have driven bypolice officers and had no problem.

Anything that you do to draw unwanted attention to yourself will usually end up with a negative outcome. All laws aside, it's not really an intelligent decision to drive without a way to see other cars around you...
