Car sometimes spikes at 20 PSI then drops to 0. Other times stays at 0. Other times works perfectly. Diagnosed as a bad waste gate.

I'm assuming it isn't good to keep driving as it is but the dealer gave the car back and told us to drive it until the part comes in.

Any long term damage or things I should keep an eye out for?

As long as it doesn't stick closed while you're boosting you should be safe. If possible, just putz around carefully, easy on the throttle until it's fixed.

Why would he need to see a technician? He already said the part is on the way so he obviously already saw one...

Just an update. WG was getting stuck open and not boosting. WG was replaced and worked fine for about 40 miles and then same symptoms. All electrical with the WG was replaced and now the car has been working fine for a few weeks.
