Need help choosing shocks

Ok, so I've got to choose what suspension I'm going to put on my car. What I've narrowed it down to are Eibach springs and shocks, H&R sport springs and Koni adjustable shocks, or H&R sport springs and Bilstein sport shocks. I'd go for the Koni's for they're adjustable-ness, but I'd have to disassemble the rear suspension every time I want to adjust it so that's out. Also ride comfort is very important for me, and I don't mind sacrificing a little performance for it. I want something firm, but not harsh or jarring. I hear the Bilstein shocks have "rising rate valving" and I'm guessing that means they get firmer the more they're compressed. Anyone have any experience with these, do they actually work like that? What about the Koni's, I'd have them set relatively soft with the firmer H&R springs so I'm not overdampening the car. And the eibach setup is sort of my default if I can't decide on something else. So can any of you share your suspension tuning wisdom with me? I'd really appretiate some help.
