Also at least on my bmw v8, there is a vallet pan gasket that can develop leaks and the coolant will slowly cook off the top of the engine. My 540 consumes maybe 1 ounce of coolant every 2 months through that gasket. I'm not bothering to replace it until it really leaks. That doesn't explain losing an entire overflow tank though. That should be detectable.
