smoking... meat
 
So... i'm thinking of picking up a gas smoker from home depot. Does anyone have experience with smoking meat?

I can have a grill... and since a smoker isn't a "grill" i'm going to push the limits of the rule.

I'm on the top floor, so i'm not concerned here. But i was wondering how much smoke a smoker actually puts out.

I love the idea of being able to smoke a huge chunk of pork or beef and eating it all week.

i was thinking of making some kinda airlock type deal to cut down on the smoke coming from the top

look up garbage can smoking....its cheap and really good.

thought about it... but i need something nicer looking since it'll be out on the balcony. the smoker i pointed out will look like a container of some sort instead of your usual grill type thing... or a garbage can haha

I'm sure they have the no grill rule because of the safety factor and smoke, both of which aren't overcome by a smoker. Thats a pretty sweet smoker though. Looks like they used some good materials to build it.

i'm sure you're right... but i'll play stupid ;)

that and the admin staff are all new compared to who was in their when i first moved in. so if they say anything... "oh... no one told me"

learn how to make a good dryrub for your meats, stock up on beer for when you are smoking it cause it needs at least 5 hours. and im pretty sure you DONT want to cut down on the smoke leaving out of the top.

well not cut down on it... but how it exits. I was thinking of getting some duct pieces and routing the smoke. maybe a filter or something at the end to reduce or spread the exit flow of the smoke so that it isn't as thick

I bought a $30 charcoal smoker from Lowe's a while back. Works great. They even have wood chips there too. If you're going to use charcoal, which I recommend (it is a smoker after all) buy lump charcoal, not briquets. Also make sure to soak your wood chips for a couple hours in cold water before you put them on the coals. Most of the meat I smoke is either ribs or brisket, I use a dry rub and smoke it for 4-5 hours, flipping it in between. Then I finish it off for 1-2 hours in the oven on the lowest setting. It helps to make sure the inside of the meat is cooked.

trash can might not be a bad idea sherwood... if its electric i can't get in any kind of trouble as i was told electric is ok...

Smoking meat Can take anywhere from 1 to 24 hours. but that all depends on you. My suggestions would be as follows
pork shoulder (or any roast for that matter) i would smoke for about 12 to 24 hours or even


steak or chops (1.5 to 2.5 inches thick) about 3 to 4 hours

fish or shellfish about an hour

Now ribs i like to smoke for 8 to 10 hours thats with bone in
bone out i do 6 to 8 hours.
Pleas keep in mind that you will have to watch the internal temps of the meats.

i dont know where you live but whatever you get would probably not get you in any trouble. i grilled all last season in a strict "no grill" complex, everyone did really. the only thing is at the end of the good weather they came by and took everyones grill that was left outside, they did let everyone claim their grill though. i would just go ahead and get that smoker cause it looks sweet, and just play around with a bunch of different methods until you find one that works... IMO its the seasoning that really makes or breaks grilled/barbecued goods.

plus, barbecue purist would tell you, its not real unless you are burning wood

yeah, its pretty strict here... and i don't see anyone grilling either...

the cabelas smoker doesn't cook though... so the propane one from home depot is a bit better...
