If you're new, your instructor will require you to keep it on. If you've never done a track day before, it's a very eye opening experience. Traction control/stability control on my G35 was always left on with my first few events, but my latter events, my instructor told me to turn it off as it would *sometimes* bog me down. Overall, I've found the traction/stability control to be unobtrusive (at least at my level) for most of the time.

For your first few events, leave it on. If there are different levels of traction control and stability control, gradually turn them off as you gain more experience. I'd advise keeping the stability control on until you really know what you are doing unless it causes your brakes to overheat.
