The problem is, even though the sword severed a piece of the bullet (like any rigid metal edge would do), you now have to dodge two pieces of metal traveling at 1000+ ft per sec.

if you had the skill to actually hit the bullet with the sword, you will have no problems with the two pieces of bullet. Hell you probably could catch them in your teeth.
